Kimchi Grilled Cheese
Ingredients:
- 2 slices sourdough bread
- 4 slices of Swiss cheese
- 3/4 cup shredded cheddar and fontina
- 1 tbl of butter or mayo to spread on outside of bread
- 2 tbl butter for the skillet or grill pan
- 1/4 cup strained kimchi
Directions:
- Preheat oven to 375
- On a sheet pan lay sourdough bread and cover each slice with cheese
- Bake in oven for 5-7 minutes or until cheese is melted
- Heat a skillet or grill pan and melt butter
- Lay drained kimchi to one side of sandwich and close. Spread butter or mayo to outside of bread and cook in warm skillet until golden brown. Use a weight or panini press to weigh down sandwich while cooking.
